Kubo Woodfired Kitchen: Elevated Filipino cuisine at The Pier @ Robertson

Overall

Taste

Value

Ambience

  • Redefines the flavours of the Philippines and celebrates the diversity of cultures and ingredients around the world using traditional Filipino barbecuing techniques
  • Kubo – Short for bahay kubo or nipa hut, is a type of stilt house indigenous to the cultures of the Philippines. It is usually built out of local materials, such as wood, bamboo, and nipa leaves
  • Dishes were unique but there were some hit and misses
  • Ambience nice for date nights with a good mix of counter seats, indoor and alfresco
  • You can get a glimpse of the grilling action at the counter seats although it gets a bit warm
  • Service was impeccable
  • Spent about SGD ~75 per pax

Taste

Value

  • Slow-cooked and grilled yellow corn in duck fat and dusted with smoked paprika salt
  • Surprisingly, I found this dish quite tasteless although it looked well seasoned. Would not order again

Taste

Value

  • Roasted butterflied prawns, served with toasted coconut cream, bird\’s eye chilli, kaffir essence and seaweed
  • Could taste the smokiness of the prawns and the coconut sambal was not overpowering

House-aged Duck (SGD 42)

Taste

Value

  • Aged duck served in two ways:
    • Duck leg confit
    • Smoked and grilled duck breast
  • Duck meat was juicy and had intense flavors due to the aging. I preferred the confit better.
  • Accompanying the duck was a carrot puree, pineapple jus and a side of broccoli lending some added sweetness to the dish

Barramundi (SGD 38)

Taste

Value

  • Grilled lightly-cured barramundi fillet, sweet potato leaves, tangy roasted tomato and fish bagoong dressing
  • Delicious thick slab of grilled lightly-cured barramundi fillet. Skin was still crispy
  • Well-balanced with the abundance of potato leaves and tomatoes to accompany the fish
  • Bagoong dressing was not overpowering (paste or sauce of small fish or shrimps which have ben salted and fermented)

Turon with Coconut Butterscotch (SGD 14)

Taste

Value

  • Deconstructed Turon (popular street food Filipino snack) with fried eggroll-style wrappers sitting on top of roasted burro banana, caramelized apples and fig in a coconut butterscotch topped with jackfruit jam and gold dust
  • Could not really taste the banana or jackfruit but this dessert still gave a sweet creamy finish along with a crunch from the fried wrappers.
